Ingredients

• 1/2 cup sour cream
• 1/2 cup mayonnaise or Greek yogurt
• 3 tablespoons white wine vinegar
• 1 teaspoon celery seed
• 3 cups fresh or frozen corn
• 2 medium tomatoes, seeds removed and chopped
• 3 ribs celery, chopped
• 1 seedless cucumber, chopped
• 1/2 red onion, finely chopped, or 4 green onions, chopped

Recipe Notes

• For a less creamy salad, reduce the mayo or yogurt to 1/4 cup.

• Change up the vegetables to suit your family's tastes. Chopped green beans (parboil them first), cooked diced potatoes, red bell pepper or chopped carrots would be delicious. 

• You could add some garlic powder and/or onion powder to the dressing.

• For a little spice, stir in some chopped fresh jalapeno or crushed red pepper flakes. 

• Store the salad in an airtight container in the fridge. 

Here's how to make it: 

1. Whisk together the sour cream, mayo or yogurt, white wine vinegar and celery seed in a small bowl. Season with salt and black pepper, to taste.
2. Put all the vegetables into a large bowl. Add the sour cream mixture and stir to combine. Taste and adjust seasonings. 
3. Serve immediately or cover and refrigerate until ready to serve.
