Farmers Market Summer Caprese Salad Recipe With Fresh Peaches, Tomatoes & Burrata Salads Lunch Vegetarian Fruit Farm to Table Recipe Side Dishes

Summer fruits and vegetables are just coming to my local farmers market at this time of year. I love to wander the market to see what's available and base a meal around that. Right now fresh greens, tomatoes and cheese were available, so I just had to get my peaches at the local market to prepare this sweeter take on a traditional caprese salad.

I love how the acidity of the tomatoes and balsamic is tempered by the sweetness of the peaches to make this beautiful summer salad recipe. All you need for this fresh caprese salad is burrata cheese, greens, fresh tomatoes, fresh peaches and a balsamic glaze or vinaigrette. Use whatever fresh greens you like. I suggest arugula, spinach or a spring mix.

Serve this salad as a light vegetarian lunch or as a side dish with dinner

Ingredients

  • 8 ounces burrata cheese, drained of liquid, patted dry with a paper towel and cut into pieces
  • 4 - 6 ounces greens (arugula, spinach or spring greens)
  • 3 - 4 large fresh tomatoes, cut into large wedges
  • 3 ripe peaches, cut into wedges
  • balsamic glaze or balsamic vinaigrette
  • olive oil

  • When drizzling with olive oil, don't add too much. You can always add more, but this salad does not require too much olive oil. 

Here's how to make it: 

  1. Place washed greens on a platter. Layer tomatoes and peaches on the greens. Add pieces of burrata.
  2. Drizzle with olive oil and then balsamic glaze. Sprinkle with salt and pepper.
