Burrata & Arugula Salad Recipe: You're 10 Minutes Away From Gourmet Salads Lunch Side Dishes Vegetables

I get very tired of the same lunches I make over and over, so I'm always looking for something easy and delicious that's new. Enter this simple, but yummy, arugula and burrata salad recipe that fills you up but only take about 10 minutes to throw together. This salad looks gourmet but takes no time at all to make. That's perfection to me.

All you will need for this arugula salad is arugula, creamy burrata, English cucumbers, tomatoes and balsamic vinegar. Put the arugula, burrata, tomatoes and cucumber in a bowl. Season with salt and freshly cracked ground pepper, then drizzle with balsamic. Done! You could add some chopped avocado, too, for more creaminess.

If possible, use a good balsamic, which is smooth and naturally sweet. If you don't have a good balsamic, mix what you have with 1 teaspoon of sweetener like honey, sugar or agave. Serve this tasty salad with fresh bread (try my 4-ingredient no-knead French bread) or crackers for a complete lunch or dinner.

Ingredients

  • 4 ounces arugula, washed
  • 4 ounces burrata, cut into bite-size pieces
  • 4 - 6 small tomatoes, cut into bite-size pieces
  • 1/2 an English cucumber, peeled and cut into pieces (I much prefer these as they are seedless and tasty)
  • 1 ripe avocado, cut into bite-size pieces (optional)
  • good balsamic vinegar

Here's how to make it: 

  1. Put the arugula into a bowl. Top with the burrata, tomatoes, cucumber and avocado, if using.
  2. Drizzle balsamic vinegar on top generously. Add some freshly ground salt and pepper.
