I love finding new ways to incorporate brightly-colored, nutrient-dense vegetables into my diet. Cabbage is rich in fiber and vitamin K, and has trace amounts of calcium, magnesium and zinc. Combine it with a delicious Asian salad dressing, and you have an amazing, delicious take on Mom's traditional cole slaw. What's great is this crunchy cabbage salad gets better the longer the dressing is on it, so make it during the weekend and enjoy it all week.

Here is your short and sweet shopping list for this red (or is it purple?) cabbage slaw side dish recipe: red or green cabbage, mixed vegetables (think carrots, cucumbers, green onions, sweet peppers) and fresh cilantro or parsley, For the creamy Asian dressing you'll need olive oil, sesame oil, white wine vinegar, honey, soy sauce, garlic, ginger, salt and crushed red pepper flakes.

Serve this cool Asian salad as a side dish with dinner or lunch.

  • 1 medium red or green cabbage, thinly shredded
  • 2 - 3 cups mixed vegetables (shredded carrots and cucumbers, sliced green onions, sweet peppers or any vegetables thinly sliced)
  • 1 cup chopped fresh cilantro or parsley

  • Don't worry if you don't have sesame oil. Just omit it.
  • This salad gets better the longer the dressing is on it!

Here's how to make it: 

  1. Toss slaw ingredients together in a large bowl. Feel free to add additional shredded vegetables like carrots, cucumbers or finely sliced sweet peppers.
  2. Make dressing by mixing all the ingredients in a small bowl or jar and combine thoroughly. 
  3. Add to salad mixture and mix thoroughly.
