A Chef's Quick & Easy Migas Recipe Is the Way to Start a Beautiful Day Breakfast Mexican Recipes Brunch

Dropped migas for breakfast this morning. Solid start to the beautiful day! Migas, which means "crumbs," is a delicious scrambled egg dish made with crispy tortillas. Other ingredients often found in migas are onion, garlic, tomato and cheese. Some like to add meat to their migas, like chorizo, but that's your call.

For my quick migas recipe, I use tortillas cut into strips, onion, green bell pepper, jalapeno, eggs, grated cheese (I like Oaxaca or mozzarella), cotija cheese, avocado and salsa. Use whatever salsa – red or green – that you enjoy. These migas cook quickly and can be on the table in abut 20 minutes.

Fun Fact: Migas were originally made from stale bread and other Portuguese and Spanish ingredients. Introduced by shepherds, migas are popular across the Iberian Peninsula, and hunters in Spain enjoy them for breakfast.

Ingredients

  • 3 - 4 tablespoons vegetable oil 
  • 2 - 3 tortillas, cut into strips
  • 1/4 onion, diced
  • 1/4 green bell pepper, diced
  • 1 jalapeño, diced
  • 4 eggs, beaten
  • grated Oaxaca or mozzarella cheese
  • cotija cheese
  • sliced avocado
  • salsa

Recipe Notes

  • Shred your own cheese instead of buying pre-shredded bags. Freshly shredded cheese always melts better.
  • Flour or corn tortillas would work in this migas recipe, but traditionally it is made with corn tortillas. 

Here's how to make it: 

  1. Heat the vegetable oil in a skillet. Add the tortilla strips and fry until crispy.
  2. Add the vegetables and cook until soft.
  3. Add the eggs and scramble it all together.
  4. Remove from the heat and add the shredded cheese. Pop it under the broiler for a couple minutes to melt the cheese, then add the cotija, avocado and salsa. Season with salt and pepper, if desired.
