We prefer to eat ours with a meat substitute for a vegan dinner, but these can easily be made with any protein like shrimp, beef or chicken to suit all the taste buds in your house. We always include a side of easy rice and beans inside our fajitas or next to them for a complete delicious lunch or dinner.

The peppers and onions cook in about 20 minutes, and the prep is just chopping the onions and peppers. So simple!

Ingredients
- 2 tablespoons vegetable oil
- 2 onions, sliced into thin rounds (red, white or yellow)
- 4 sweet peppers, sliced into thin long strips (red, yellow and/or orange)
- taco seasoning or fajita seasoning
- corn tortillas or flour tortillas
- 1/2 - 1 cup salsa (I used store-bought chunky salsa in a jar)
- meat of choice (cooked chicken, beef, shrimp or meat substitute)
Optional Ingredients
- Mexican seasoning
- guacamole
- cilantro
- lime wedges
- sour cream
Here's how to make it:
- Heat oven to 300 degrees F. Place tortillas in foil, add a sprinkle of water on top and close, crimping the edges. Place in oven to warm.
- Heat oil in a large skillet over medium-high heat. Add onions, separating them as you put them into the pan. Sauté for 5 minutes.
- Add the peppers, salsa and about 1 to 2 tablespoons taco or fajita seasoning. (Remember, you can always add more seasoning or salsa at any point so go easy until you decide what tastes good.)
- Reduce heat to medium and cover letting the onions and peppers get soft, about 10 to 15 minutes.
- When the onions and peppers are soft add in your meat or meat substitute, if desired. Heat meat through about 5 minutes and mix thoroughly.
- Serve in warm tortillas with desired toppings.
