This teriyaki chicken recipe is a great family meal that comes together so easily after a few hours simmering in your slow cooker. Add an easy green side dish like green beans or broccoli, put the chicken and sauce over noodles, rice or quinoa, and you have a dinner the whole family will enjoy.

For this easy slow-cooker teriyaki chicken recipe you'll need boneless, skinless chicken thighs or breasts, reduced-sodium tamari or soy sauce, honey, garlic, fresh ginger, rice vinegar, cornstarch and water. Put all the ingredients into a slow cooker, cover and cook for about three to six hours, depending on high or low heat. Remove the cooked chicken, shred and serve with the sauce that was created as it cooks.

This easy teriyaki chicken is also a great meal-prep recipe. Make it, let it cool and pack it into meal prep containers with your favorite side dishes.

Cuisine: Asian
Prep Time 10 minutes
Cook Time: 4 to 6 hours

Total Time: 4 to 6 hours
Servings: 6 to 8

Ingredients

  • 2 pounds boneless, skinless chicken (I like skinless breasts and thighs)
  • 1/2 cup reduced-sodium tamari or soy sauce
  • 1/4 cup honey
  • 2 garlic cloves, minced
  • 2 tablespoons grated or minced fresh ginger
  • 2 tablespoons rice vinegar (or white wine, apple cider vinegar, lemon or lime juice)
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • crushed red pepper flakes, to taste (optional)

Here's how to make it:

  1. Combine chicken, tamari or soy sauce, honey, garlic, ginger, red pepper flakes and vinegar in a slow cooker. Cover. Cook on low about 5 to 6 hours or on high about 3 hours, or until chicken is no longer pink and cooked through.
  2. Remove chicken from sauce to a cutting board and shred.
  3. Pour sauce from slow cooker into a small pot and add water and cornstarch, whisking to combine. Let simmer, uncovered, for 10 minutes. Put the chicken back into the slow cooker or serve with the sauce on top.
