Ingredients

• 10 1/2 tablespoons butter, softened 
• 1 egg
• 1/2 cup powdered sugar, plus more for sprinkling
• 1 1/2 cups all-purpose flour
• 1 teaspoon ground cinnamon
• 1/2 lemon, juiced
• 1 tangerine, juiced and zested
• 2 1/4 cups shredded coconut
• 1 egg (for egg wash)
• 5 - 6 tangerines, sliced thin

Recipe Notes

• The amount of cookies depends on the size of the rounds you cut from the dough.

• Be sure to let the cookies cool completely before serving.

• Store the cookies in an airtight container.

Here's how to make it: 

1. Beat the butter, egg and sugar with an electric mixer until light and fluffy. 
2. Add the flour, cinnamon, lemon juice and tangerine juice and zest. Mix until incorporated. Stir in the coconut. 
3. Form the dough into a ball, flatten into a disc and refrigerate 30 minutes. 
4. Roll out the dough using a rolling pin. Use a round biscuit cutter or cookie cutter to cut into rounds bigger than the tangerine slices. 
5. Brush each dough circle with some egg wash and place a tangerine on top. Sprinkle with powdered sugar. 
6. Bake the cookies in a preheated 350-degree F oven for about 15 minutes. Remove and let them cool on the baking sheets a few minutes before removing to cool completely.
