This Fluffy Pepper & Spinach Frittata Recipe Is a Perfect Breakfast-for-Dinner Recipe Breakfast Vegetarian

In our home, we’re big fans of breakfast any time of day. In fact, breakfast for dinner is one of our favorite meals. This fluffy pepper and spinach frittata recipe is an easy, delicious example of how we turned a few ingredients in our refrigerator into a nutritious meal. Frittatas are flexible like that: you can add any vegetables or proteins you like, and they cook up quick and delish.

This spinach and orange pepper frittata recipe is made with egg whites, so it’s better for you. Top it with shredded Parmesan if desired.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 cups fresh spinach
  • 1 orange pepper, diced
  • 1 teaspoon Italian seasoning blend (or your favorite seasoning)
  • 2 cups egg whites
  • 1/4 cup shredded Parmesan cheese, if desired

Here's how to make it:

  1. In a skillet, heat the olive oil on medium heat. Add the pepper and stir fry for a couple of minutes. Add spinach and stir until spinach wilts. Add the seasoning and stir to combine.
  2. Pour the egg whites into the mixture and stir to combine. Season with salt and pepper, if desired, then cover pan with lid. Reduce heat to low and allow to cook slowly for about 5 to 10 minutes, or until eggs are set (bottom of eggs should be golden brown).
  3. Sprinkle with Parmesan cheese, if desired. Cover with lid for a couple of minutes, until melted.
  4. Cut into quarters and serve with an English muffin or toast of your choice.
