To make these fall-inspired pumpkin spice cookies you will need to grab this very short list of ingredients: a box of spice cake mix, a can of pumpkin puree (not pumpkin pie filling) and white chocolate chips. Mix up the ingredients, drop onto baking sheets and bake about 12 to 15 minutes (ovens vary). Let them cool and then dig in!

- 15 ounces (1 box) spice cake mix
- 14 ounces (1 can) pumpkin puree
- 1 cup white chocolate chips
Here's how to make it:
- Combine all the ingredients in a large mixing bowl. (If you can't find a spice cake mix, use a yellow cake mix and add in 1 tablespoon of pumpkin pie spice. You could use milk chocolate chips or semisweet chocolate chips if you're not a fan of white chocolate.)
- Drop onto parchment paper-lined baking sheets (about 2 tablespoons of dough per cookie).
- Bake in a preheated 350-degree F oven for about 12 to 14 minutes or until just set. Cook a few minutes on the pan before removing to cool completely. (For the best results, do not overbake the cookies.) Store the cookies in an airtight container to keep them fresh.
