Quick Lemon Battered Fried Fish Recipe Is Moist & Crispy Seafood Dinner

Lemon makes everything better, including fried fish. This easy fried fish recipe gets a dunk in lemon juice before being coated in a wet lemon-infused batter. The result is fish with a lemony, crispy outside and a moist, flaky inside. 

Serve this lemon battered fried fish with more lemon wedges for squeezing and tartar sauce for dipping. Don't forget about some french fries, onion rings, hushpuppies or cole slaw to round out the meal.

Ingredients

  • 2 pounds white fish fillets (perch, cod, walleye, etc.)
  • 1 1/2 cups flour (divided)
  • 1 teaspoon baking powder
  • 1/2 teaspoon sugar
  • 1 egg
  • 2/3 cup water
  • 2/3 cup lemon juice (divided)
  • vegetable oil, for frying

Here's how to make it:

  1. Combine 1 cup of the flour, baking powder, sugar and salt, to taste, in a bowl. In another bowl combine the egg, water and 1/3 cup of the lemon juice. Add the wet ingredients to the dry until smooth. Heat about 1 inch of oil in a skillet.
  2. Put the remaining lemon juice into a small bowl and the remaining flour in another small bowl. Dip the fish into the lemon juice then into the flour and then into the batter to coat. 
  3. Put the fish into the hot oil and cook over medium-high heat for about 2 to 3 minutes on each side or until golden brown and crispy. Drain on paper towels. (You may have to do this in batches.) Serve with lemon wedges.
