Broccoli Cheese Egg Muffins Recipe: Perfect for Breakfast & Meal Prepping Breakfast Brunch

These broccoli cheese egg muffins are great for breakfast on the go and for meal prep, too! I feel good about eating them and feeding them to the kids because they’re both high in protein and filling (perfect for my son who is “so hungry” well before his school lunch time!). If you want to make them in advance, wrap them in plastic wrap, stick them in the fridge and when you’re ready to serve, just pop them in the microwave for 30 to 60 seconds.

I love when a recipe is customizable. This one definitely is! You can make so many variations of these egg muffins with whatever ingredients you have on hand or whatever vegetables you want to sneak in. See the additional ingredients list below for ideas.

Ingredients

  • 1 teaspoon extra virgin olive oil
  • 4 cups broccoli florets
  • 4 whole large eggs
  • 1 cup egg whites
  • 1/4 cup reduced fat shredded cheddar
  • 1/4 cup grated cheese (your preference or use more cheddar)

Optional Add-ins

  • tomatoes
  • mushrooms
  • bell peppers
  • onion
  • kale
  • turkey bacon
  • spinach, chopped scallions and ham (green eggs and ham)

Here’s how to make it:

  1. Steam broccoli with a little water for about 6 to 7 minutes. Crumble cooked broccoli into smaller pieces and add oil, salt and pepper, to taste. Mix well.
  2. Spray a nonstick muffin tin with cooking spray. Spoon broccoli mixture evenly into nine cups.
  3. In a medium bowl, beat egg whites, eggs, grated cheese, salt and pepper. to taste.
  4. Pour over the broccoli until tins are a little more than 3/4 full. Top with the cheddar cheese. Bake in a preheated 350-degree F oven in the oven until cooked, about 20 minutes.
