Three ingredients? Yes, please! You could easily swap the broccoli in this frittata squares recipe for spinach, asparagus, zucchini, red peppers or your favorite vegetable. If you're feeling crazy, throw in some cooked breakfast sausage, bacon or leftover salmon.

Ingredients 

  • 2 - 3 cups chopped broccoli, steamed until crisp-tender 
  • 12 eggs
  • 2 cups shredded yellow or white cheddar cheese

Here's how to make it:

  1. Combine the eggs, cheese and broccoli in a bowl. Stir. Season with salt and pepper. Pour the mixture into a greased 13x9-inch baking dish
  2. Bake in a preheated 350-degree F oven for about 25 to 30 minutes or until eggs are set. Cool about 5 minutes before cutting into squares.
