I saw a recipe the other day for Sweet Alabama Pecan Bread and decided it sounded good, and I was sure I had some pecans on hand. Nope. But I did have a package of omega-3 trail mix that had pecans (as well as almonds, pepitas and dried cranberries), so I did a little substituting. I’m not sure I could ever follow a recipe as written, just on general principle. (Thanks, Mom!)

Ingredients
- 2 cups trail mix (I used Great Value Omega 3 Trail Mix with dried cranberries, walnuts, pepitas, almonds and pecans), chopped in a food processor. The original recipe called for 2 cups chopped pecans.)
- 1 1/2 cups self-rising flour
- 1 cup granulated sugar
- 1 cup brown sugar
- 3/4 cup vegetable oil
- 1/4 cup butter, melted (original recipe called for 1 cup vegetable oil)
- 4 large eggs, beaten
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Here’s how to make it:
- In a large bowl, combine both brown and white sugars with the oil and melted butter. Add eggs and mix until no lumps of sugar remain. Add vanilla, flour and salt. Mix until blended. Fold in the trail mix. Pour batter into a 13x9-inch baking pan that's been sprayed with nonstick cooking spray.
- Bake in a preheated 350-degree F oven for 30 to 35 minutes or until lightly browned and a toothpick inserted in the middle comes out clean. Set it aside for 15 minutes to cool before cutting. Store the bread in an airtight container to keep it fresh.
