Melt-in-Your-Mouth Banana Oatmeal Waffle Recipe Is Nutritious & Delicious Breakfast Brunch Gluten-free

Always looking for ways to use one of my favorite baking ingredients – overripe bananas – I came up with this easy recipe for banana waffles that uses the bananas right in the waffle mix. The result is a melt-in-your-mouth waffle that is delicious and nutritious.

This waffle recipe can be made with regular flour or gluten-free flour (which I used) for an elegant brunch. You can keep leftovers in the refrigerator for a few days and just pop them in the toaster to reheat for quick on-the-go breakfasts!

Servings: Makes about 6 waffles

Ingredients

Here’s how to make it:

  1. Preheat waffle iron. Put the dry ingredients into a large mixing bowl, then whisk until combined. Add in vanilla, eggs, milk, oil and bananas. Mix until batter is smooth, but do not over-mix.
  2. Spray preheated waffle iron with non-stick cooking spray, if needed. Pour mix onto hot waffle iron. Cook until golden brown. Remove waffle and repeat until all waffles are cooked.
  3. Top waffles with fruit or your favorite toppings.
