First biscuit bread and now biscuit muffins? Oh, yes, please. This biscuit muffin recipe bakes up light and tender, just like a biscuit, but no rolling or cutting involved. (Check out the biscuit bread recipe.)

The three-ingredient biscuits are made with self-rising flour, mayonnaise and milk. Nothing more, nothing less. The flour and mayonnaise are mixed together in a bowl until it resembles coarse crumbs. The milk is stirred in until just moistened. Spoon the batter into greased muffin tins and bake for about 15 minutes. Now you have a tender biscuit muffin ready to be spread with something or eaten as-is. 

Serve these quick biscuit muffins hot out of the oven with butter, jam, jelly, fruit preserves, honey, maple syrup or whatever you like to put on your biscuits.

Here's how to make it: 

  1. Put the flour and mayonnaise into a bowl. Mix with a fork or your fingertips until it resembles coarse crumbs. 
  2. Add the milk and stir until just moistened.
  3. Spoon the mixture into greased muffin tins. (You could use baking liners.) Bake in a preheated 425-degree F oven for about 15 minutes or until lightly browned.
