Sugar snap peas are sometimes overlooked. We're not sure why! Sugar snap peas are crunchy, cook quickly and are sweet, so even picky eaters tend to like them. This easy sautéed sugar snap peas recipe with garlic and lemon is a refreshing vegetable recipe to add to your menu rotation.

To clean sugar snap peas, rinse them off then remove the stem end with a sharp knife. Next, remove the string that runs along the pod. Simple! You could also use frozen sugar snap peas for this easy healthy recipe.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound sugar snap peas, cleaned
  • 4 cloves garlic, minced or pressed
  • 2 teaspoons lemon juice

Here's how to make it:

  1. Heat the oil in a large skillet over medium-high heat. Add the sugar snap peas and cook, stirring often, until they begin to char. 
  2. Add the garlic and cook 30 seconds. Add the lemon juice and stir. Season with salt and pepper. Cook for another 2 minutes or so and serve.
