Easy Charred Corn Guacamole Recipe Is Fresh, Healthy & Addictive Snacks Appetizers

Creamy avocado, charred corn and jalapeno are the absolute perfect combination of flavors and textures. This colorful corn guacamole recipe looks beautiful served in a molcajete

If you don't have an indoor or outdoor grill, you can char the corn in a hot cast iron skillet.

Prep Time: 5 minutes
Cook Time: 5 to 7 minutes

Total Time: 10 to 12 minutes
Servings: 8

Ingredients

  • 1 corn on the cob
  • 1 jalapeño
  • 2 ripe avocados, peeled and pit removed
  • 3 tablespoons chopped fresh cilantro
  • 1/4 cup chopped tomato
  • 2 tablespoons chopped red onion 
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced

Here's how to make it: 

  1. Put the corn and jalapeño into a hot, dry skillet over medium-high heat and cook, turning often, until charred. You could also cook this on an indoor grill or outdoor grill. Cool, then cut the kernels off the cob. Chop the jalapeño, removing ribs and seeds if you want less heat. 
  2. Chop the avocado and put it into a bowl. Add all the ingredients. Mix gently to combine. Season with salt and pepper. Serve with tortilla chips.
