- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground cumin
- 1 cup tomato sauce
- 2 cups water
- 2 cups instant white rice (uncooked)
- fresh cilantro, for garnish (optional)
Here's how to make it:
- Heat the olive oil in a saucepan. Add the garlic powder, onion powder and ground cumin. Cook, stirring, 1 minute.
- Add the tomato sauce and water. Bring to a boil.
- Add the rice. Season with salt and pepper. (You could add some fresh, canned or frozen corn to the rice for flavor and texture.) Bring back to a boil, cover and turn off the heat. Let the rice sit for 5 minutes. Fluff with a fork and serve. Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
