Growing up, we ate those rice box mixes all the time. Nothing wrong with them, really, but when making a flavored rice from scratch is so easy, why not do it?

This mushroom rice recipe is ready in about 30 minutes and is packed with flavor, so it may be time to finally surrender the box mix for good. All you need to make this quick gluten-free, low-sodium mushroom rice recipe is olive oil, fresh mushrooms, onion, garlic, chicken broth and long-grain rice. The rice cooks up on the stovetop in about 25 minutes.

Serve this easy mushroom rice as a side dish with dinner. It goes perfectly with chicken, beef, lamb and pork

Here's how to make it:

  1. Heat the olive oil in a skillet. Add the mushrooms and onion and cook until softened, about 5 minutes. Add garlic and cook an additional minute. Season with salt and pepper, to taste. 
  2. Add the broth and rice and bring to a boil. Reduce heat to low, cover and simmer about 20 minutes or until rice is tender. Stir in parsley and serve.
