Ingredients

• 1/4 cup plus 1 tablespoon unsweetened cocoa powder
• 1 1/2 cups powdered sugar
• 2 large egg whites

Here's how to make it: 

1. Whisk together the cocoa powder and powdered sugar in a large mixing bowl. 
2. Add the egg whites and mix until they are absorbed into the dry ingredients. (This may take a few minutes.) The batter will be thick and sticky. 
3. Put balls (about 2 tablespoons) onto parchment paper-lined baking sheets. Bake in a preheated 325-degree F oven for about 15 to 18 minutes or until they puff up and are shiny. (The number of cookies will depend on the size of the balls you form.)
4. Remove and cool on the cookie sheet for a few minutes or so before removing to cool completely. Store the cookies in an airtight container.
