This easy, cheesy cabbage recipe is quick to make, cooks in one pan and is super flavorful. In fact, you could call this casserole recipe a low-carb taste sensation that's ready in about 30 minutes! To make this easy, cheesy cabbage casserole recipe you will need ground beef, onion, garlic, green cabbage, a can of diced tomatoes, a can of tomato sauce, dried Italian seasoning and cheddar cheese.
Because you use ground beef, this easy dinner recipe is a complete meal. But you could add another vegetable side dish or a fresh garden salad. The leftovers reheat beautifully for lunch the next day.

Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 3 - 4 cloves garlic, minced
- 4 cups chopped or shredded green cabbage or 10 ounces (1 bag) cole slaw mix
- 15 ounces (1 can) diced tomatoes, with their liquid
- 8 ounces (1 can) tomato sauce
- 2 teaspoons Italian seasoning
- 2 cups shredded regular or low-fat cheddar cheese
Here's how to make it:
- In a skillet, cook the ground beef, onion and garlic until meat is browned and cooked through, about 5 minutes. Drain fat. (Try this recipe with ground turkey or ground chicken.)
- Add the cabbage, diced tomatoes with their liquid (I used fire-roasted diced tomatoes), tomato sauce and Italian seasoning. Season with salt and pepper. Stir to combine. Cover and cook until cabbage is softened, about 10 to 15 minutes. (I used a 10-ounce bag of angel hair cole slaw for this recipe.)
- Top with the cheese. I used a combination of shredded cheddar, Swiss and gruyere cheese. Cover and allow the cheese to melt. Store any leftovers in an airtight container in the fridge. It reheats well in the microwave.
