Fluffy Almond Flour Pancake Recipe: Low Carb, Gluten Free & Dairy Free Breakfast Brunch Gluten-free

If you're watching your carbs and gluten, you can still enjoy a stack of hot pancakes! This easy pancake recipe is made with almond flour and almond milk, making it low-carb, dairy-free and gluten-free.

The fluffy almond flour pancakes are made with almond flour, baking powder, salt, almond milk, eggs, maple syrup and vanilla. These pancakes have a lighter consistency than regular pancakes made with all-purpose flour. Because of that, they are best made into smaller pancakes. 

Serve this almond flour pancake recipe for breakfast or brunch with maple syrup, pancake syrup, brown sugar syrup or your favorite pancake toppings.

Ingredients

  • 1 1/3 cups almond flour
  • 1 teaspoon baking powder
  • dash of salt
  • 1/4 cup almond milk
  • 2 eggs
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla

Here's how to make it:

  1. Whisk together the almond flour, baking powder and salt in a bowl. 
  2. In another bowl, stir together the almond milk, eggs, maple syrup and vanilla.
  3. Combine the wet ingredients with the dry ingredients. 
  4. Heat a large skillet over medium heat. Spray with nonstick cooking spray or add a few drops of vegetable oil. Pour about 1/4 cup of the batter for each pancake into the pan. Cook for about 2 minutes per side or until cooked through.
