Rather than dip all of my french fries into the whole jar (which would have been very easy to do since it's truly addictive), I decided to see how the aioli would taste on some chicken thighs I had waiting in the fridge. The answer? Amazing. This Mediterranean baked chicken recipe with truffle aioli is crazy good!

Truffles are a rare fungus cultivated and harvested from natural environments such as where they grow underground or on tree roots. Edible black truffles are sought after for their intense and savory umami flavor, and they're used in Italian, French and other Mediterranean countries' cuisines. Historically, aioli is a sauce made of a garlic and olive oil emulsion, with origins in Mediterranean cooking. Ingredients

• 2 pounds boneless/skinless chicken thighs
• 1/2 cup truffle aioli
• 1/2 cup Parmesan cheese, grated or shredded
• 3/4 teaspoon garlic powder
• salt and pepper, to taste (optional, but I used about 1 teaspoon of each)

Here's how to make it:

1. Place the chicken into a 13x9-inch baking dish that's been sprayed with cooking spray. Season the chicken on both sides with salt and pepper, to taste, if desired. (Instead of chicken thighs, you could use boneless/skinless chicken breasts, though you may have to adjust cooking time.)
2. In a small mixing bowl, add the aioli, Parmesan cheese and garlic powder.
3. Stir to combine.
4. Spread the mixture over the chicken, ensuring that it's completely coated in the mixture.
5. Bake in an oven that's been preheated to 400 degrees F until the chicken is cooked through and golden, about 20 minutes. (Chicken is considered done when it reaches 165 degrees F on a food thermometer.)
6. Remove from oven and serve. Garnish with fresh herbs, if desired.
7. Store leftover chicken in an airtight container in the refrigerator and reheat in the microwave.
