You only need four ingredients to make this fluffy raspberry recipe: vanilla pudding, water, raspberry gelatin and non-dairy whipped topping. The fresh raspberries (check out the health benefits of raspberries) for serving are optional. You boil the pudding mix in water, then stir in the gelatin. Pour the mixture into a bowl (or bowls) and chill until set. If you're not a fan of raspberry or want to change it up, you could use strawberry or cherry-flavored gelatin instead.

- 3 ounces (1 small box) cook and serve vanilla pudding
- 2 cups water
- 3 ounces (1 small box) raspberry-flavored gelatin
- 12 ounces (1 tub) non-dairy whipped topping

Here's how to make it:
- Put the water and pudding mix into a saucepot. Stir to combine then bring to a boil. Once it reaches the boiling point, remove from the heat. Stir in the gelatin until well combined. Pour the mixture into a bowl and refrigerate for about 2 to 3 hours or until chilled.
- Fold in the whipped topping with an electric mixer until smooth. Serve with fresh berries, if desired. To elevate this dessert, serve with a dollop of homemade whipped cream, mint leaves and a few raspberries as garnish. Store leftovers in an airtight container in the refrigerator.
