- 1 pre-made graham cracker pie crust (or pie crust of choice)
- 8 ounces (1 package) cream cheese, at room temperature
- 14 ounces (1 can) sweetened condensed milk
- 1/2 cup lemon juice (fresh is best)
- 1 teaspoon vanilla extract
Here's how to make it:
- In a medium mixing bowl, beat together the cream cheese and sweetened condensed milk until smooth.
- Beat in the lemon juice and vanilla. Pour the mixture into your pie crust of choice. (Graham cracker, shortbread or nut crust all work well. To make a gluten-free pie, use a gluten-free crust.)
- Refrigerate at least 1 hour before serving. Top with meringue or whipped cream, if desired. Store leftovers in an airtight container in the refrigerator.
