A+ Zucchini Bread Recipe: A School Teacher's Favorite Zucchini Bread Bread/Muffins Snacks Farm to Table Recipe

Everyone in my family has a sweet tooth. Since I enjoy baking more than I enjoy cooking, they’re always bugging me to bake something. Lucky for me, my friend Craig is an award-winning cook from our hometown, not to mention a teacher and dad – he does it all!

All of his recipes are fantastic, including this zucchini bread recipe. With only a few steps, it’s sure to become a favorite with your sweet tooths! All you need to make this moist zucchini bread is all-purpose flour, granulated sugar, cinnamon, salt, eggs, shredded fresh zucchini, baking powder, baking soda, vegetable oil, chopped nuts and raisins. The nuts and raisins are optional, but add great texture and flavor, so consider inviting them to the party.

  • Almonds, walnuts, pecans, hazelnuts, macadamia nuts or cashews are delicious in this zucchini bread.

Here's how to make it: 

  1. In a large bowl, combine flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, nuts and raisins.
  2. In another bowl, stir and beat eggs and oil together.
  3. Add egg/oil mixture over top of the other ingredients, stirring until moistened. Pour mixture into two 9x5-inch loaf pans.
  4. Bake in a preheated 350-degree F oven for about 1 hour.
