Who else loves breakfast for dinner? This easy kale and cottage cheese quiche recipe doesn't have a crust, so it's lighter on the calories and packed with protein. And with cream cheese finally getting a spot in the limelight, this is one recipe you need to add to your recipe rotation. 

Cottage cheese seems to be all the rage right now. With people eating healthier, it's no wonder. Cottage cheese has many health benefits, with a big one being that it is protein rich. One cup of cottage cheese contains about 25 grams of healthy protein.

This kale quiche recipe is simple to make with a short ingredient list: onion, tomatoes, eggs, cottage cheese, reduced-fat cheddar cheese, almond flour and chopped kale. The ingredients are baked in a casserole dish in the oven for about one hour. 

Serve this creamy cottage cheese and kale quiche with a salad or roasted vegetables for breakfast, dinner, brunch or lunch. Delicious!

Ingredients

  • 2 tablespoons minced onion
  • 1 cup chopped tomatoes
  • 4 eggs
  • 2 cups 2% cottage cheese
  • 1 1/3 cup reduced-fat cheddar cheese
  • 2 tablespoons almond flour
  • 1/4 teaspoon salt
  • 2 cups chopped kale

Here's how to make it: 

  1. In a nonstick pan, cook the onion until golden. Add the tomato and cook until liquid has cooked out.
  2. In a bowl, combine the eggs, cottage cheese, cheddar cheese, flour and salt. Add the kale and onion-tomato and mix well.
  3. Pour the mixture into a buttered 11x7-inch baking pan. Bake in a preheated 350-degree F oven for about 1 hour.
