Ready to brunch this weekend? This creamy caramelized onion quiche recipe is easy to make and is a fabulous recipe for Sunday brunch (or Saturday!). The quiche does require a little patience when cooking the onions, but it is well worth it. Have a glass a wine, bloody mary or a mimosa while they cook!

The onions are caramelized in butter and olive oil, then thickened up with a little flour. The whole caramelization process should take 30 to 40 minutes. The quiche filling – eggs, heavy whipping cream, dried time and gruyere cheese – is stirred together and poured into a baked pie crust. Bake for about 20 to 30 minutes or until the eggs are set, and brunch, breakfast or dinner is done.

If serving for brunch or breakfast, add a side of fresh fruit. For dinner, add a fresh salad

Ingredients

  • 1 refrigerated pie crust, thawed

Onions

  • 3 large onions (about 2 pounds), sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon flour

Filling

  • 3 eggs
  • 3/4 cup heavy whipping cream
  • 1/4 teaspoon dried thyme
  • 3/4 cup grated gruyere cheese

  • You could use fontina, asiago, Monterey Jack, mozzarella, white cheddar or your favorite cheese in place of gruyere.
  • For some crunch, top the quiche with some french fried onions.

Here's how to make it:

  1. Melt the butter and olive oil together in a large skillet. Add the onions. Cook over low heat until they're browned, soft and caramelized, about 30 to 40 minutes. When done, sprinkle in the flour and season with salt and pepper, to taste. Cook another 2 minutes. Remove from heat and cool. 
  2. Press the pie crust into a pie plate or round baking dish. Prick the bottom with a fork. Bake according to package directions.
  3. While the crust bakes, beat the eggs and cream together. Add about one-third of the cheese, thyme, and salt and pepper. Add the caramelized onions. Pour the mixture into the crust. Sprinkle with the remaining cheese. Bake in a preheated 425-degree F oven for 20 to 30 minutes.
