Easy Skinny Mashed Potatoes Recipe Has a Secret Ingredient Side Dishes Vegetables

Mashed potatoes get a bad rap because they are usually loaded with heavy cream, butter and even cheese. This easy skinny mashed potato recipe with carrots uses olive oil and low-fat milk. 

The addition of carrots adds sweetness and the smoked paprika contributes a little extra something something. These are some addictive mashed potatoes!

Ingredients

  • 4 cups cubed potatoes
  • 4 carrots, coarsely shredded
  • 2 tablespoons olive oil
  • 1/4 cup low-fat milk  
  • 1 teaspoon ground smoked paprika

Here's how to make it:

  1. Boil the potatoes and carrots in salted water until tender, about 15 minutes. Drain. 
  2. Add the olive oil, milk and paprika. Mash until desired smoothness with a potato masher. Season with salt and pepper, to taste.
