  • You can use a red, yellow or orange bell pepper, if you prefer, instead of green.
  • Store the soup in an airtight container in the refrigerator. Reheat in the microwave or on the stovetop in a saucepot.

Here's how to make it: 

  1. Heat the olive oil in a large soup pot. Add the celery, onion, carrots and bell pepper. Cook until softened, about 5 to 7 minutes. Add the garlic and cook 30 seconds. 
  2. Add the chicken broth, tomatoes and cabbage. Simmer gently until cabbage is tender, about 15 minutes. 
  3. Add the oregano, basil and red pepper flakes. Season with salt and pepper.
