- 4 cups fresh or frozen corn, thawed
- 4 tablespoons mayonnaise
- 4 tablespoons sour cream
- 1/4 - 1/3 cup cotija cheese, plus more for garnish
- 1 1/2 - 2 teaspoons chili powder
- 1 1/2 - 2 teaspoons garlic powder
- 1 lime, juiced
- 5 green onions, chopped
- 1/4 cup chopped fresh cilantro, plus more for garnish
Here's how to make it:
- Put everything into a bowl. Mix well. Season with salt and pepper. (If using frozen corn, be sure to thaw and drain it well.)
- Taste and adjust seasonings to your liking. Garnish with more cotija and fresh cilantro. Store the salad in an airtight container in the fridge.
