The easy beef enchiladas are made with lean ground beef, chunky salsa, enchilada sauce, flour tortillas and shredded cheese. The ground beef is cooked in a skillet until browned, then the salsa is added. One can of enchilada sauce is poured into a baking dish. The salsa and meat mixture is rolled in the flour tortillas and put into the baking dish. Pour the other can of sauce over the top and sprinkle with the shredded cheese. Now it takes a quick trip in the oven to get hot and melty. Dinner is done.

Ingredients
- 1 pound lean ground beef
- 1 cup chunky salsa
- 20 ounces (2 cans) enchilada sauce
- 8 flour tortillas
- 2 cups shredded Mexican blend cheese or cheddar cheese
Recipe Notes
- Of course homemade enchilada sauce is always best, but sometimes it's just not in the cards. You can find good-quality enchilada sauces at the grocery store.
- Use whatever cheese you like, just make sure it's a good melting cheese.
- For color and more flavor, garnish with fresh chopped cilantro.
- You could add chopped onion to the enchilada filling.
- Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
Here's how to make it:
- Cook the ground beef in a skillet until cooked through. Stir in the salsa. Remove from heat.
- Pour 1 can of the enchilada sauce on the bottom of a baking dish.
- Divide the meat mixture between the tortillas and roll up. Place seam side down on top of the enchilada sauce.
- Pour the other can of enchilada sauce over the top. Sprinkle with cheese. Cover with aluminum foil and bake in a preheated 350-degree F oven for about 30 minutes.
