To make this easy creamy tomato soup recipe you will need flour, butter, chicken broth, a can of diced tomatoes (check out the health benefits of tomatoes), dried basil, dried oregano, grated Parmesan cheese, half and half, and bulk Italian sausage. For some spice, grab the jar of crushed red pepper flakes.
If you're like my husband and mom, and don't really care for Italian sausage (the fennel gets them), use ground turkey or ground chicken instead. Serve this rich, creamy tomato soup for dinner with crusty bread and a crisp salad. Make extra to pack for lunch for the next day.

Ingredients
- 1/2 cup all-purpose flour or gluten-free flour
- 1 stick (8 tablespoons) butter
- 4 cups chicken broth
- 28 ounces (1 can) diced tomatoes
- 1 tablespoon dried basil
- 1 teaspoon dried oregano
- 1 cup grated Parmesan cheese
- 2 cups half and half
- 1/2 pound bulk Italian sausage
Here's how to make it:
- Melt the butter in a soup pot. Whisk in the flour and cook 1 minute. Slowly start pouring in the chicken broth until smooth.
- Add the tomatoes with their juice, basil and oregano. With an immersion blender, blend until almost smooth, leaving a few chunks. Bring to a simmer and cook gently, stirring occasionally, for 15 minutes.
- While the soup simmers, cook the Italian sausage in a skillet until browned and cooked through. (You can use hot, mild or sweet Italian sausage to fit your family's tastes. If you can't find bulk Italian sausage, but links and remove the casings.)
- Add the Parmesan cheese, half and half and cooked sausage to the soup. Season with salt and pepper, if desired. If you like a little spice, add crushed red pepper flakes to taste. Bring to a simmer and cook about 5 more minutes. Store leftovers in an airtight container in the refrigerator. Reheat in the microwave.
