Ingredients
- 3 pounds bone-in chicken pieces (wings, legs or thighs work well)
- 2 cups olive brine
- 2 tablespoons canola oil
- 1 teaspoon garlic powder (or to taste)
Here's how to make it:
- Put the chicken into a plastic zipper bag. Pour in the olive juice. Marinate for at least 2 hours in the refrigerator and up to overnight. (Use whatever pieces of chicken you like.)
- When ready to cook, remove the chicken from the liquid and pat dry. Put them into a bowl and season with black pepper and a little salt.
- Combine the oil and garlic powder in a small bowl. Drizzle this mixture over the chicken. Toss to coat. Put the chicken onto a baking sheet in a single layer. (You could add other herbs when adding the garlic powder. Dill, thyme, rosemary or oregano would be good choices. For easier cleanup, line the baking sheet with aluminum foil or parchment paper.)
- Bake in a preheated 425-degree F oven for about 30 minutes. Flip the chicken over and continue to back another 10 to 15 minutes or until golden brown and cooked through. (Chicken is cooked through at 165 degrees F on a food thermometer.) Store any leftover chicken in an airtight container in the fridge.
