To make this pumpkin pizza you will need olive oil, an onion, fresh garlic, a pizza crust (you can make a homemade pizza dough, but we used a premade dough), pumpkin puree and gouda cheese. After caramelizing the onions, the pizza is assembled and bakes up in about 15 minutes in the oven. So delicious!

Ingredients
- 2 tablespoons olive oil
- 1 onion, sliced thin
- 4 cloves garlic, minced
- 1 premade pizza crust or refrigerated pizza dough
- 3/4 cup pumpkin puree
- 2 cups gouda, grated
Recipe Notes
- You could make your own homemade pizza dough instead of using premade pizza dough.
- Use canned pumpkin puree, not pumpkin pie filling. You could also use fresh pumpkin puree.
- Instead of gouda, try white cheddar, fontina, asiago or your favorite cheese blend.
- For some spice, sprinkle on some crushed red pepper flakes.
Here's how to make it:
- Heat the oil in a large pan. Add the onions and cook about 20 minutes or until soft and caramelized, stirring often. Add the garlic and cook 30 seconds. Season with salt and pepper.
- Put the pizza crust on a pizza pan or pizza stone. Spread the pumpkin puree evenly over the dough. Top with the onions, then sprinkle with the cheese.
- Bake in a preheated 475-degree F oven for about 15 minutes or until crust is golden and cheese has melted.
