- 1/3 cup chopped parsley
- 1/4 cup water
- 1/4 cup lemon juice
- 3 garlic cloves
- 2/3 cup Greek yogurt
- 2/3 cup olive oil

- Put all the ingredients into a blender. (You could also use an immersion blender.)
- Blend until smooth. (Add more water, if needed, to reach desired consistency.) Season with salt and pepper, if desired. Store in an airtight container, mason jar or salad dressing cruet. This recipe can easily be doubled.
