Ingredients

  • 2 large bulbs fennel, stalks removed and sliced thin
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese (optional)

Here's how to make it:

  1. Put the fennel into a parchment paper-lined baking pan. Drizzle with the olive oil and sprinkle with the minced garlic. Season with salt and pepper.
  2. Bake in a preheated 400-degree F oven for about 20 minutes. Sprinkle with the Parmesan cheese, if using, and continue to bake another 10 minutes.
