Easy Strawberry Nectarine Baked Oatmeal Recipe: Delicious Baked Oatmeal Bursting With Summer Flavors Breakfast Brunch
This easy blueberry baked oatmeal recipe has become one of my favorite go-to breakfast recipes because it's so simple and so good. I made my own version of this recipe using fresh strawberries and ripe nectarines. While baking, the strawberries melt into the batter, giving it a slightly pink color with pops of yellow-orange nectarine slices. And the taste is just as colorful – bursting with summer flavors and absolutely delicious!

Ingredients
- 3 cups rolled oats (I used gluten-free quick cooking rolled oats)
- 1 cup milk or nut milk (I used almond milk)
- 2/3 cup brown sugar
- 1/2 cup melted butter
- 4 eggs
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 2 teaspoons vanilla extract
- dash of salt
- 1 quart fresh strawberries, sliced (about 4 cups)
- 3 ripe nectarines, sliced (about 3 cups)
- 1/4 cup chopped pecans (optional)
- 1/2 cup chopped walnuts (optional)
Here's how to make it:
- Put all ingredients except strawberries, nectarines and nuts (if using) into a bowl. Mix until well combined.
- Fold in strawberries, nectarines and nuts (if using).
- Pour the batter into an 13x9-inch baking pan.
- Bake in a preheated 350-degree F oven for about 30 minutes, until golden brown. Serve with a dollop of whipped cream, if desired.
