This easy blueberry baked oatmeal recipe has become one of my favorite go-to breakfast recipes because it's so simple and so good. I made my own version of this recipe using fresh strawberries and ripe nectarines. While baking, the strawberries melt into the batter, giving it a slightly pink color with pops of yellow-orange nectarine slices. And the taste is just as colorful – bursting with summer flavors and absolutely delicious!

Ingredients

Here's how to make it:

  1. Put all ingredients except strawberries, nectarines and nuts (if using) into a bowl. Mix until well combined.
  2. Fold in strawberries, nectarines and nuts (if using).
  3. Pour the batter into an 13x9-inch baking pan.
  4. Bake in a preheated 350-degree F oven for about 30 minutes, until golden brown. Serve with a dollop of whipped cream, if desired.
