Here's how to make it:

  1. Pour the coconut milk into a bowl. Add the sugar and vanilla. Whisk until well combined.
  2. Pour the mixture into an ice cream maker. Process for about 25 minutes. 
  3. For no-churn ice cream, pour the mixture into a loaf pan. Freeze until firm, stirring often. Let the ice cream soften a bit before serving.

Notes and serving suggestions:

  • Sandwich the ice cream between cookies and roll in coconut for coconut ice cream sandwiches.
  • Stir together with more coconut milk to make a creamy milkshake.
  • For a more intense coconut flavor, add about 1/4 to 1/2 teaspoon of coconut extract.
  • Drizzle the inside of glasses with dairy-free caramel or dairy-free chocolate sauce. Add scoops of the coconut ice cream and sprinkle with flaked coconut.
