Crispy 3-Ingredient Frico Parmesan Broccoli Recipe Is Anything But Boring Vegetables Vegetarian Side Dishes Gluten-free Low Sodium Recipes

It's funny how just one simple ingredient and a different cooking method can change up a boring ingredient. In the case of this easy broccoli recipe, it's Parmesan cheese and high heat. Yep, that's it.

This gluten-free broccoli dish has three simple ingredients: fresh broccoli, olive oil and grated Parmesan cheese. The low-sodium broccoli is cooked in a skillet in a little water (just a little!) until crisp-tender. Olive oil, salt and black pepper are added before you toss in the freshly grated Parmesan cheese. Crank that heat to high and let the Parmesan get crispy and the broccoli a little color. Perfection!

Your family will love this easy frico (Parmesan crisps) broccoli recipe. And don't forget about the health benefits of broccoli. Serve is as a side dish with your favorite dinners

Recipe Notes

  • Spice up the broccoli by adding some crushed red pepper flakes.
  • Try this recipe with broccolini or even green beans.
  • Store the broccoli in an airtight container in the fridge.

Here's how to make it:

  1. Put the broccoli into a skillet with about 1/4 cup or less of water. Cook until crisp-tender (or desired doneness) and water has evaporated.
  2. Add a drizzle of olive oil, season with salt and pepper, if desired, and cook about 1 more minute.
  3. Spread the broccoli where it's even across the pan. Sprinkle grated Parmesan cheese over the broccoli where it falls down and hits the bottom of the pan.
  4. Turn the heat up and cook until it begins to brown and get crispy. Sprinkle with a little more Parmesan on top. Use a spatula to remove the broccoli and crispy Parmesan from the pan.
