  • Be sure to preheat the waffle iron before cooking the chaffles.
  • Stir in some extras if you're so inclined like fresh chopped chives, green onions, minced red pepper or whatever you'd like.
  • Grind some fresh black pepper into the batter or over the top when serving. It may remind you of cacio e pepe!

Here's how to make it: 

  1. Combine the eggs and cheese in a bowl. Mix well.
  2. Cook one-fourth of the batter in a preheated waffle maker that's been coated with nonstick cooking spray for about 2 to 3 minutes. Remove to a plate and repeat with the remaining batter.
