Enjoy salmon for breakfast, brunch and lunch just as much as dinner? We hear ya! Have you tried this Mediterranean salmon breakfast sandwich? Delicious! Here's another creative way to use leftover salmon. This hot salmon sandwich recipe takes about 15 minutes to make. It's a hearty, but healthy, lunch or dinner option.

All you need for this hot baked salmon sandwich recipe is sandwich rolls (try to use a multigrain roll or even a gluten-free roll), olive oil, fresh or canned salmon, tomatoes, lettuce, cheese, crushed red pepper flakes, dried oregano and optional crispy slices of bacon. The ingredients are layered on the bread and then baked until warmed through. Sandwich perfection!

Serve these salmon sandwiches with a garden salad on the side for a fun sandwich and salad combination for lunch or dinner.

  • If you don't have leftover salmon, use canned salmon.

Here's how to make it: 

  1. Open up the sandwich rolls and lay them on a baking sheet. Drizzle olive oil on the interior of the bread. 
  2. Top with lettuce, salmon, mozzarella and tomato slices. Add cooked bacon slices, if using. 
  3. Sprinkle with some dried oregano, crushed red pepper flakes, sea salt and freshly ground black pepper. Drizzle with a little more olive oil. 
  4. Bake in a preheated 350-degree F oven for about 10 minutes to crisp the bread and melt the cheese. Makes two sandwiches.
