Ingredients

  • 4 boneless chicken breasts
  • 1/2 cup chopped almonds
  • 1/2 cup chopped pecans
  • 4 tablespoons butter
  • 1 cup panko breadcrumbs
  • zest from 1 lemon
  • 1 teaspoon minced fresh thyme
  • 2 eggs
  • 2 teaspoons Dijon mustard
  • 1/2 cup flour

Here's how to make it:

  1. Pulse the nuts in a food processor or blender until finely chopped. 
  2. Melt the butter in a skillet. Add the nuts and panko to the pan and cook about 10 minutes, stirring often, until golden brown. Stir in the lemon zest and thyme. Season with salt and pepper. Set aside. 
  3. Put the eggs and mustard into a bowl and beat well. Put the flour into another bowl. 
  4. Season the chicken with salt and pepper. Dip the chicken into the flour, then into the egg then into the nut mixture, pressing so it adheres. Put the chicken on a baking sheet or into a baking dish. 
  5. Bake the chicken in a preheated 350-degree F oven for about 25 minutes or until cooked through and golden brown.
