Roasted fingerling potatoes are such an easy, delicious side dish to accompany just about any protein. This easy roasted fingerling potatoes recipe in an aromatic herb butter sauce is one of my favorites.

The savory “secret” sauce is the key to this quick, tasty fingerling potato side dish recipe. Use the dried version of the herbs (they blend better than fresh) and mix with melted butter separately in a saucepan. Also, it’s best to not use rosemary, as it overpowers the flavorful low-calorie, low-sodium herb blend.

Here's what you need to gather for this gluten-free potatoes recipe: fingerling potatoes, marjoram, basil, oregano, thyme, parsley, butter and extra virgin olive oil. The budget-friendly ingredients bake for about 30 minutes, until crispy and golden.

  • I use dried herbs because they blend better than fresh.
  • Feel free to swap in your favorite herb but I've found that rosemary overpowers the herb blend, so prefer not to use rosemary in this recipe.
  • Garnish with fresh herbs, if desired.
  • Store leftovers in an airtight container in the refrigerator or freezer.

Here's how to make them:

  1. Coat a 13x9-inch baking pan with olive oil. Spread the potatoes in a single layer in the pan. 
  2. In a sauté pan, melt the butter then add the herbs. Stir to blend then remove from heat. 
  3. Cover the potatoes with the butter sauce and try to coat them completely in the sauce. Season with salt and pepper, to taste, if desired. 
  4. Bake in a preheated 375-degree F oven for 25 to 30 minutes, turning the potatoes halfway through the cooking, or until until crispy and golden brown.
