Avocado Pesto Recipe With Mushrooms: A Healthy 15-Minute Pasta Dinner Pasta Vegan Vegetarian Dinner Lunch

Avocado pesto is delicious! This easy avocado pesto pasta recipe is topped with healthy mushrooms – and it's ready in about 15 minutes. But the taste and ease of prep are not the only things that should make you want to grab that pasta pot! Avocados are one of the most popular health foods and is a superfood. The health benefits of avocado are undeniable, and they range from improving gut health to reducing the risk of heart disease. 

For this awesome avocado pesto recipe you will need the following wholesome ingredients: fresh basil, avocados, walnuts (also a superfood!), fresh lemon juice, garlic, olive oil, mushrooms and spaghetti noodles. The avocado pesto ingredients are whirled in a blender until smooth. Stir together with the cooked pasta and top with mushrooms. Healthy and delicious!

Serve this avocado pesto dish for dinner as a side dish or as a vegetarian main dish.

Ingredients

  • 1 big bunch fresh basil (about 2 cups)
  • 2 ripe avocados, peeled and pitted
  • 1/2 cup walnuts  
  • 2 tablespoons lemon juice
  • 4 cloves garlic
  • 1/2 cup plus 1 tablespoon olive oil (divided)
  • 1 package (8 ounces) mushrooms, sliced
  • spaghetti noodles, cooked according to package directions

  • Use your favorite pasta. Rotini, penne, fusilli, cavatappi, fettuccine or bowties would work well.
  • Don't like mushrooms? Omit them! 

Here's how to make it: 

  1. Add the basil, avocados, nuts, 1/2 cup olive oil lemon juice and garlic to a blender. Season with salt and pepper. Blend until thick and smooth. Taste and add more salt, pepper and lemon juice, if needed. 
  2. Heat the 1 tablespoon of olive oil in a skillet. Cook the mushrooms until soft, about 6 to 7 minutes. 
  3. Combine the cooked spaghetti and avocado pesto. Top with the cooked mushrooms. Garnish with additional basil leaves, pine nuts and red pepper flakes, if desired.
