Recipe Notes

  • You could use chicken broth in a pinch instead of beef broth.
  • Store the rice in an airtight container in the fridge for up to four days.
  • This rice would be a delicious stuffing for peppers.

Here's how to make it:

  1. Brown the ground beef in a Dutch oven, breaking it up with a spatula as it cooks.
  2. Add the onion, bell pepper, celery, garlic and Cajun seasoning. Cook until vegetables start to soften, about 5 minutes.
  3. Add the rice and beef broth. Bring the mixture to a boil, reduce heat and cook, covered, for about 20 to 25 minutes, or until rice is cooked.
  4. Let the rice sit about 5 minutes, then fluff with a fork. Sprinkle with the green onions.

I love dirty rice! Some recipes have gizzards in them, but I prefer just ground beef. Though I have had some with gizzards that was delicious. Thanks for sharing this recipe, Gwen Johnson !
