- 1 pork loin (about 1 pound)
- olive oil
- 1/2 cup cranberry juice
- 1/4 cup cranberry sauce
- 1 tablespoon Dijon mustard

- In a small pot, combine the cranberry juice, cranberry sauce and mustard. Cook, stirring occasionally, until thick, about 10 minutes.
- Season the pork loin with salt and pepper, to taste. Put it into a baking dish and drizzle with olive oil. Bake in a preheated 425-degree F oven for about 25 minutes, brushing often with the cranberry mixture, until it reaches 145 degrees F on a meat thermometer. Allow to rest 5 minutes before slicing.
