Take your tacos up a (homemade) notch by making this easy beef and potatoes taco meat recipe. Growing up, there was a taco restaurant that had potatoes in their taco meat, and I absolutely loved them. Adding potatoes to taco meat not only ups nutrition (check out the health benefits of potatoes), but also stretches the meat to make more tacos. This budget recipe is a keeper!
To make this Mexican recipe for taco night, you will need only seven simple ingredients. Here is your short shopping list for this Tex-Mex dinner: ground beef (you could use ground turkey instead), potatoes, cooking oil, onion, fresh garlic, ground cumin and dried oregano.
Variation: You can just as easily add a package of taco seasoning mix if you're in a rush after cooking the potato and browning the ground beef. If using taco seasoning, add the recommended amount of water on the package.
Serve this tasty high-protein taco meat recipe in crispy taco shells or flour tortillas with your favorite taco toppings. You could also use the seasoned ground beef and potatoes for taco salads, burritos, chimichangas, flautas or on nachos. Yum!
