Prosciutto is an Italian dry cured ham. When it's wrapped around a stalk of asparagus and baked with Parmesan and olive oil, it transforms into an incredible appetizer or even a light lunch.

In addition to being nutritious (thanks to healthy asparagus), this tasty gluten-free recipe is really easy to prepare. Start by trimming the ends off of fresh asparagus and drizzle with olive oil. Wrap each asparagus spear with a piece of prosciutto and sprinkle with freshly grated Parmesan cheese. Bake the low-sodium asparagus in the oven until crisp-tender. Wow!

  • 1 pound asparagus, tough ends trimmed off
  • 1 tablespoon olive oil
  • 1/2 pound prosciutto
  • 1/3 cup freshly grated Parmesan cheese

  • For a cold appetizer, simply wrap the asparagus around the prosciutto and serve. 
  • You also could drizzle the asparagus with an oil and vinegar vinaigrette. Delish!
  • If you don't have prosciutto, you can try this recipe with regular ham (or even bacon).
  • Store leftovers in an airtight container in the refrigerator.

Here's how to make it:

  1. Toss the trimmed asparagus with the olive oil. Season with salt and pepper, if desired.
  2. Lay pieces of prosciutto on a sprayed baking sheet. Sprinkle with the Parmesan.
  3. Wrap an asparagus spear in each piece of prosciutto. Place in a single layer on the baking sheet. 
  4. Bake in a preheated 425-degree F oven for about 10 minutes or until crispy and browned. Serve.
